I've always been really into cooking for myself, along with for others. I made mine and my Dad's favorite dinner (at least I think it's his favorite...) pasta! For myself, I cooked up some corn pasta and for him, I made regular durum wheat pasta. I mixed them both with my *famous* (or not yet famous) tomato sauce recipe. Would you like the recipe? I can see you drooling over there. So here it is:
Tomato sauce ingredients:
- 1 cup canned and diced tomatoes (with the juice)
- 1/2 cup chopped onions
- 1-2 Tbs coconut sugar
- A LOT of fresh basil, chopped
- 2 cups fresh arugula
Directions:
- In a pot, bring the canned tomatoes to a simmer. Add all ingredients and cook for about 5-7 minutes.
- Remove from heat and let cool. The warm pasta will reheat it and the cooling of the sauce allows for the flavors to be enhanced.
- Serve with pasta and there you go!
My dad and I really enjoyed this dish. I hope you enjoy it as much as we did. :)
